Giffy’s Amaretti Recipe

Makes about 30

4 x 70g packets of ground almonds
2 x Large Eggs ( or 2 smaller eggs and the white of 1 other egg)
1 cup of white sugar
1 heaped teaspoon of cocoa
1 Tablespoon of rose water/ almond essence/ (optional, whatever you fancy, really)
• Preheat oven to 180ºC (160 if fan bake)
• Mix almonds, sugar and cocoa in a large bowl.
• Add eggs and essence and mix until all combined (will be sticky)
• Using a teaspoon, remove some batter and roll in sugar. Then place on baking sheet (flatten slightly using your finger). Repeat until all arranged on sheet. You may wish to decorate by pressing an almond slice into the centre of the biscuit.
• Place in bottom of the oven and bake for approx 15min (check at 10, in case your oven is hot).
• Remove to cool for at least 5 min before eating. Should keep for up to a week, unlikely to last that long as incredibly moreish.
