I've had a good weekend so far. On Friday went to work drinks and then watched the Senior Volleyball team get thoroughly beaten. Then went and played pool badly, although I managed to be in the winning team both times. In one game I sunk 4 of the other sides balls! We then had dinner at the Khmer Noodle house and I had noodles so that was good.
Yesterday was pretty much fun-filled. I tried out my culinary skills using a japanese recipe booked borrowed from the ALT at school. I made "Potato Croquettes" with their special sauce and everything. Here is my (slightly altered to produce larger amounts) recipe.
Ingredients:
6 potatoes 250g mince 1 onion 1 egg
1T vege oil flour for dusting breadcrumbs for coating
oil for deepfrying salt pepper
3T worchester sauce 2T red wine 2t sugar
4T tomato sauce
Method:
Cut the potatoes up into "1 inch" chunks and leave to soak in water. Then mince up the onions and sautee them with the oil, add the mince when the onions are turning translucent and cook that too. Season with salt and pepper (I also added dashes of chilli powder and paprika). Leave it and cook the potatoes. When they are cooked, mash them, then mix in your onion/mince mixture. While it's cooling you can set up your flour, egg (beaten) and bread crumbs. I would then suggest getting the deep fryer or whatever ready. You then shape your potato mixture into little portions (I liked little triangles over the traditional "hash brown" shape, I also made a heart for Beau and a fish shaped one which was for me, but which his sister ate!) you dust it with flour, then dip it in the egg, then cover in bread crumbs. Once they are ready start deep frying them (temp around 175 degrees C) until they are a golden brown colour. Mix and then heat all the sauce ingredients (wine, w.sauce, t.sauce, sugar) in the microwave for about 30 seconds, then it is all go. Eat and enjoy!
After the cooking went and RPed in the fabulous buffy-esque game run at Svend's new and awesome house. All went well. Then played board game "Betrayal" (Sp?). All good.
Gotta go walk around Karori Wildlife Sanctuary now. Should be awesome!
